Classic Cake Recipe – Chocolate Chiffon Cake

Ingredients required:

  • 7 large eggs, (separated)
  • 1/2 cup baking cocoa
  • 3/4 cup boiling water
  • 1-3/4 cups cake flour
  • 1-3/4 cups sugar
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup canola oil
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon cream of tartar

ICING:

  • 1/3 cup butter
  • 2 cups confectioners’ sugar
  • 2 ounces unsweetened chocolate, melted and cooled
  • 1-1/2 teaspoons vanilla extract
  • 3 to 4 tablespoons hot water
  • Chopped nuts, optional

Instructions

Preheat the oven at 360° and start with mixing the ingredients. 

Start with the eggs. Let the eggs sit at room temperature for about 30 minutes. Take a bowl and combine water and cocoa. Blend it until smooth. Cool the mixture for 20 minutes. 

Now, in a large bowl, mix all the dry ingredients like sugar, salt, baking soda, and flour. 

In a different bowl, mix the remaining ingredients like vanilla, oil, and egg yolks, add to the dry ingredients and add cocoa mixture too. Beat well until combined. 

Take another large bowl and beat in cream of tartar and egg whites with clean beaters on high speed till stiff peaks are formed. After that, mix it into the egg yolk mixture

Take a ten inches tube pan ( ungreased) and spoon in the batter. Prick in the batter with a knife to remove air bubbles. In the oven, bake at 325° at the lowest rack of the oven for about 60- 65 minutes or till it reforms its shape when lightly pressed. 

Immediately upturn the pan and let it cool completely. Gently run a knife along the sides and the center of the tube pan. 

Time for icing and for that, melt butter in a saucepan. Remove from the flame and add vanilla, chocolate, water, and confectioners’ sugar and pour it over the cake. You can even add nuts if desired.
